Truffles
1) Chocolate truffles
Ingredients (makes about 20-26 truffles depending on the size)
120 ml heavy whipping cream (>35 % fat)
227 g semi-sweet chocolate (>50 % cocoa. I like using 70 % cocoa though)
2 tbs unsalted butter
cocoa powder
1. Cut block chocolate into small pieces (lucky you can skip step 1 if you are using chocolate chips).
2. Put cut chocolate in a medium bowl and melt it in hot water bath (alternatively with microwave).
3. Add butter and stir well. Pour whipping cream and stir well until you see no white streaks of cream.
4. Once cooled, fridge overnight (at least 5 hours).
5. Scoop bite sized amount of chocolate and roll into ball shaped.
6. Roll chocolate ball into a plate filled with cocoa powder.
2) Oreo truffles
Ingredients
1 packet (250 g) softened cream cheese
448 g oreo sandwich (flavor depends on personal preference)
200 g melted semi-sweet chocolate
1. Crush the oreo cookies to fine crumbs using food processor (or the old way of using mortar like me lol)
2. Place crushed cookies into a medium bowl and add cream cheese. Mix well until blended (whereby you see no white streaks of cheese)
3. Refrigerate about 1 hour until firm.
4. Scoop bite sized amount of chocolate and roll into ball shaped.
5. Dip balls into melted chocolate and place them onto a tray layered with wax baking paper. (most challenging step!)
5. Refrigerate a few hours until chocolate coating solidify or freeze 15 min (short cut).
